Tie Guan Yin is the classic Chinese Oolong tea. Tie Guan Yin Oolong is one of the most popular Chinese teas. Accordingly, there are numerous legends and myths that attest to the origin of this tea. Tie Guan Yin is a very aromatic tea. In this lightly oxidized version with beautiful floral notes, it develops an exquisite taste and is at the same time rich in nutrients. Tie Guan Yin is an Oolong tea born out of compassion.
Tie Guan Yin tea translates to 'Iron Goddess of Compassion.
In China, there is a legend about a farmer who always passed by an abandoned temple dedicated to this goddess on his way to his fields. He felt sorry that the temple was so dilapidated. Unfortunately, he did not have the financial means to restore it. Disappointed, he lit incense sticks and cleaned the entire temple grounds. That night, the goddess appeared to him in a dream and said that she had a gift for him in the cave behind the temple. He was to take good care of it and generously share it with his neighbors, and it would bring joy and prosperity for many generations. The next day, he found a young tea sprout in the cave, which he planted in his garden.
After two years, it had grown into a sturdy bush, and the farmer tried the first tea. He was delighted by the mild taste with a slight bitterness and enchanting floral notes. As a result, he decided to take even better care of his tea plant. After another two years, he already had 200 tea bushes. Since he had now become wealthy, he was also able to restore the dilapidated temple. He also shared the seeds of his tea bushes with his neighbors, and the Tie Guan Yin tea soon gained great fame.
Preparation of Oolong Tea:
When preparing Oolong tea, it is especially important to choose a teapot that is large enough to allow the mostly rolled leaves to unfold properly. Oolong tea can be very well prepared in a gaiwan or in a Chinese teapot, for example made of Yixing clay. Oolong tea is also ideal for the Chinese tea ceremony using a Gong Fu Cha ceremonial set.
For the first infusion, you should also choose a slightly longer steeping time to allow the tea leaves to unfold. For the first infusion, a water temperature of 80–90 °C and a steeping time of 2.5–3 minutes are recommended. All subsequent infusions can then be brewed with a steeping time of 2 minutes.
