Production:

In this way, a high GABA content is achieved while the other ingredients of the tea remain largely unaffected. The fermentation or oxidation of the tea leaves is now prevented. In his research on the amino acid L-theanine, he found that the amount of GABA can increase up to 50 times when tea leaves wilt after harvest without exposure to oxygen. GABA also occurs naturally in tea leaves, with the content of the amino acid γ-aminobutyric acid, or GABA for short, ranging from 8 to 39 mg per 100 g of dry tea leaves. In GABA teas, however, it is between 250 mg and approximately 350 mg per 100 g of dry leaves.

The prepared hot water, at a temperature of about 70-80 °C, is then poured over the tea leaves. The teapot or cup must now be covered to preserve the tea during the steeping time. When using a cup, a small saucer can serve as a cover. The tea should now steep for an individual period of 2 to 3 minutes.
